I'm sure you've been enjoying all the lush fruits and veggies at your local health food store or local wally-world(aka, Wal-mart...I sure have! I'm kind of an exception to the crunchy, organic, Target only shopper. Even though I am all about living as healthy as possible and doing what you can to help our economy and environment. I shop at Wal-mart. I love it for it's deals and amazing one stop shopping experience. Not to say I don't love target too. I do. But I am not at all too proud to shop at wal-mart. Kale. My new found health love.
It's no secret that I admire Gwyneth Paltrow. She has been known to be much more liberal than I am, but that doesn't stop me from learning from that great actress/hot mama of two. I have enjoyed her web-site Goop for the last couple of years. If you are like me, then you can spit out the seeds in this yummy watermelon site. I plan on doing her "making of pepper potts" workout/diet in the next 8-9 weeks! It looks insane but doable. I always find some new workout after baby...something to give me new motivation.

That's where I was introduced to the amazing health benefits of kale. You may have read my veggie fruit smoothie blog This idea is kind of the same...but a lot faster and less calories.
I have been making this juice for the last couple days and I really enjoy it. It's refreshing. And nice to know I am doing something good for the baby and me:)
Kale & OJ
Just take a stem of kale, rinse it and pull off the leafs. Stuff them in the blender and add 4-6 oz of orange juice and a couple ounces of water. A squirt of lemon juice and blend till smooth. You could strain it, but I don't. I prefer keeping all the kale and just gulping through it.

My kids did not like it, but I did trick them into having kale. I put it in my fruit smoothie on Sunday morning. The kids loved it and even my husband liked it.

Made the kale juice blend this morning! Other than the bits of kale I really like it. I waited a while to let the bits rise, then used a straw to get the "clean" juice from the bottom. I might try using my juicer with it (I rarely use it, but this would be perfect!) to avoid the kale bits. Overall very refreshing!
