VIVA! el CINCO DE MAYO!!
I'm from Texas and I love Mexican food! So you don't have to pull my arm to celebrate cinco de mayo!
The history behind this day is pretty interesting.
I had a clothing swap this past weekend and made both of these recipes.They were a hit with the girls, but I think I loved them the most!!!
Both recipes are fast and easy! I was inspired by a couple recipes in some magazine (sorry, not sure which one) but changed up some stuff to make it even simpler. This momma needs simplicity!
Watermelon Margaritas
Ingredients:
- Watermelon-cut into cubes.
- Jose Cuervo Margaritas (ready to serve margaritas)
So if you're having a party, just buy two bottles or serve the leftover watermelon.:)
Mix in blender. You'll have to do two blender batches. Or make a single. Serve over ice.

Fish Tacos
Ingredients:
Fish (Salmon, Tilapia or Cod, your choice) {I used 4 salmon filets}
1 package of taco seasoning (use two packages if doubling the fish)
1/4 cup olive oil
Toppings:
Sour cream
Finely shredded mozzarella cheese
pico de gallo- I made my own...just chopped up cilantro, tomatoes and yellow bell pepper. Mixed together, added lime and refrigerated overnight.
Instructions:
Preheat oven at 350 degrees. Rinse fish, place in casserole dish, sprinkle taco seasoning and olive oil over fish. Bake for 15-20 min. Chop fish into large pieces inside casserole dish.
Heat tortillas and serve. Yum!
