Cold Beer Beans- "I like your dinner, Mom"

I rarely make the same thing twice. I need to be like the Mom who rotates her recipes...but I often will forget recipes I make up and get so bored with making the same thing over again. It's just the way I cook. My family (mainly husband, never complain) So I guess I'm doing okay in the kitchen:)My seven year old and two year old are a different story.

I made up a new black bean recipe last night. Thought I'd better blog about it before I forget. Like last week...I made up this delicious salmon potpie and forgot to blog about it...so doubt I'll remember it perfectly.

So to the beans. Are you curious about the beer? Yes, there is a can of beer in this one..Miller light to be exact. I would have preferred to use Shiner(Texan) but we didn't have any. Miller light was yummy in it. Even Gregory goes "I like your dinner, Mom" without me asking;)We told them it had beer in it...but how the heat cooks out the alcohol. haha Gwyneth got big eyes.

Here is the yummy recipe.



Cold Beer Beans

Ingredients

* 1 12-ounce bottle or can of beer (preferably a bottle of Shiner)
* 2 14 oz can of Swanson broth
* 1 large onion, chopped
* 1 pound dried black beans, rinsed and pre-soaked
* 1 cup salsa (I used pace)
* 1 slice of turkey bacon(for flavor)drop it in and then remove later
* 2 beef broth cubes(no msg kind is best)
* package of black beans and rice(Zatarain's) Cooked as directed. Then added to the crockpot.
* Sour cream, shredded cheese and corn chips for topping and side (I also made cornbread)


Preparation
In the bowl of a slow cooker, combine the beer, broth, salsa, onion, beans, bacon slice, beef broth cubes and cooked rice and beans. Set the slow cooker to high and cook, covered, until the beans are tender 4 to 5 1/2 hours. Divide among individual bowls and top with cheese and sour cream.

Enjoy the leftovers or share with a neighbor!
