Another reason to blog & delish Oatmeal Cookies

I never thought I would blog. I know some friends think I'm silly for blogging, but I enjoy it and I hope there are some of you that enjoy reading my short entries.:)

One reason I have found recently, which gives me another reason to blog, is the fact I can go through a new recipe in my mind and save it with a pic! It will help me later on...since I rarely remember what changes I made to found recipes.

So let's get to those yummy Oatmeal cookies!

I got the craving for homemade oatmeal cookies Sunday night...I haven't had too many cravings so far...but I really wanted these.

I was out of several ingredients the recipe I found called for...so I got creative!

Chewy Oatmeal Cookies

Ingredients

* 3T. butter, softened
* 1/2 C. apple sauce(natural, preferably)
* 1/4 C.white sugar
* 1/4 honey
* 2 eggs
* 2 teaspoons rum extract
* 1 1/4 cups all-purpose flour
* 1/2 teaspoon baking soda
* 2 teaspoons ground cinnamon
* 1 teaspoon salt
* 3 cups quick cooking oats
* 1/2-1 C. chopped walnuts or pecans
* 1/2-1 C. chocolate chips
* 1/2-1 C. raisins

Directions

1. Preheat the oven to 325 degrees F (165 degrees C).
2. In a large bowl, cream together butter, honey, apple sauce and white sugar. Beat in eggs one at a time, then stir in the rum. Combine the flour, baking soda, oats, salt and cinnamon; stir into the creamed mixture. Mix in nuts, choc-chips and raisins just blended. Drop by heaping teaspoonfuls onto ungreased cookie sheets. Cookies should be at least 2 inches apart.
3. Bake for about 15 minutes in the preheated oven. Let cool on cookie sheet for 5min...then cool cookies on a wire rack.
